Healthier Lemon Cake


This cake recipe is from my friend Andrea. It is so refreshing and so moist....everyone LOVES it.

Ingredients:1 yellow cake mix
1/4 cup water
1 cup pureed pumpkin
2 tablespoons vegetable oil
2 large eggs plus 1 large egg white
1 container (6 oz) fat free lemon yogurt
Frosting:
1 package low fat cream cheese, softened
1/2 cup powdered sugar
1 tsp lemon extract

Directions:Mix together for 1-2 minutes, bake at 350 for 20 minutes or until golden brown. When cooled, add frosting.
