Oatmeal Cake

Ingredients:1 ½ c. boiling water
1 cup oatmeal
½ c. applesauce
1 c. honey (or white sugar)
1 c. brown sugar
2 eggs
1 ½ c. whole wheat flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
6 T. butter
½ c. brown sugar
¼ c. evaporated milk
1 c. shredded coconut
1 c. toasted, chopped almonds

Directions:Preheat oven to 350 degrees

Pour 1 ½ c. boiling water over 1 c. oatmeal. Let stand while
mixing other ingredients.

Cream together:

½ c. applesauce
1 c. honey (or white sugar)
1 c. brown sugar
2 eggs

Add oatmeal to creamed mixture. In another medium bowl sift
together:

1 ½ c. whole wheat flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon

Add oatmeal mixture to dry ingredients and mix until
combined. Bake in a 9 ½ x 13” cake pan for 35-40 min. (until
inserted toothpick comes out clean).

When cake is finished make the following topping:

In a saucepan melt:

6 T. butter

Add ½ c. brown sugar
¼ c. evaporated milk

Let simmer for a couple of minutes then add:
1 c. shredded coconut
1 c. toasted, chopped almonds

Pour over cake.
