Ingredients: | 2 cups sugar 1/4 tsp salt 2 cups flour 1/2 cup butter 1/2 cup vegetable shortening 3 tbl Hershey's Cocoa 1 cup Coca-Cola 1/2 cup buttermilk 1 tsp baking soda 2 eggs 1 tsp vanilla 2 cups mini marshmallows 1 stick butter 6 tbl Coca Cola 1/4 tsp salt 3 tbl Hershey's Cocoa 1 box powdered sugar, 1 tsp vanilla |
Directions: | Mix together: 2 cups sugar 1/4 tsp salt 2 cups flour Melt together: 1/2 cup butter 1/2 cup vegetable shortening 3 tbl Hershey's Cocoa 1 cup Coca-Cola Pour into the sugar and flour, stir and add 1/2 cup buttermilk, 1 tsp baking soda, 2 eggs, 1 running over tsp vanilla, and a couple of handfuls of mini marshmallows. Pour into greased 9 by 13 inch pan. Marshmallows will rise to the top, so make sure they are evenly distributed, adding more to fill in the gaps. Stir them into the batter a little so they're not sitting naked on top. Bake at 350 for about 45 minutes, pay attention towards the end so the marshmallows don't get scorched. For the icing: (it will be hot when you pour it on the cake) Take 1 stick butter,6 tbl Coca Cola, 1/4 tsp salt, 3 tbl Hershey's Cocoa, and heat until melted together. Then, over very low heat, add 1 box powdered sugar, stir in very quickly (it just needs to be melted), add 1 running over tsp vanilla and pour on hot cake. |
