Here is an old family recipe book that was made long before blogs became popular. We have just turned it into a blog so please have patience with us as we update pictures and info. We will also be adding some new recipes along the way.
1-In a medium bowl, place the chicken, scallions, ginger, lemon juice, paprika, cumin, cayenne, 1 1/2 teaspoon coarse salt, and 1/2 teaspoon pepper; toss to combine. Set aside to marinate for at least 10 and up to 30 minutes.
2-Grill chicken, adding salt and pepper.
3-Halve the pitas crosswise (toast on grill, if you like). Into each pocket, place chicken and cucumber slices. Serve with cumin yogurt.
